Historically brewed in the winter months, utilising the cooler weather to control fermentations and produce essential spent grains for the animals at a time of year when less food could be grown. The beer was then stored and used as a refreshment for the workers who helped during the thirsty summer harvest months.
We’ve sourced a hybrid yeast strain that ferments just as it would in traditional farm brews, giving the beer unusual spicy and intense fruity flavours.
